Above it all: a commercial-grade extractor hood running the full width.
This kitchen had been cooking for seven people, three meals a day, for 5 years. Roti on the hob every morning. Dal simmering through the afternoon. Tandoori in the evening. The grease wasn't grease in the normal sense — it was ghee and mustard oil, layered, with turmeric underneath everything.
